Inspired by the diverse food offering at The Glen, chef Elise Pulbrook has created a modern Asian spin on the Aussie Christmas favourite - prawns!

Tom Yum Prawn Sliders (serves 6):
- 6 cooked Australian prawns, shelled and halved lengthways (sourced from Fish Pier)
- 6 mini slider buns, toasted (sourced from Le Crois)
- 5 tbsp Kewpie mayo (following ingredients sourced from The Glen Asian Grocer)
- 1.5 tsp Tom Yum paste
- Juice & zest of 1 lime
- 2-3 tsp aromatic chilli oil
- Small handful of mixed Asian herbs
- 6 small slices of mango
- 6 small slices of avocado
Method:
- Halve prawns lengthways. Dress with lime zest, juice of half the lime and chilli oil.
- Toast buns.
- Mix Kewpie mayo, Tom Yum paste and remaining lime juice.
- Layer each slider with mayo, prawns, mango, herbs, and avocado.
- Close the bun, secure with a skewer and serve!
Make ahead tip: To get ahead, pre slice and dress the prawns, wash and dry the herbs, cut the buns and make the mayo! Just before serving, toast the buns and slice the avocado.
